Finnish rye pancakes

Directions
- Mix the water and milk in a pot and heat them to 37 °C.
- Sprinkle the yeast into a large mixing bowl and pour in the warm mixture of water and milk. Add the salt. ≈ 3 min
- Add the rye flour to the salad bowl and mix thoroughly to ensure it is evenly distributed. ≈ 4 min
- Cover the mixing bowl with a dishcloth and let the dough rest for 1 hour.
- Add the wheat flour and work the dough vigorously until it is smooth and pulls away from the sides of the mixing bowl. ≈ 3 min
- Let it cook for another 30 minutes.
- Knead the dough on a clean surface. Divide it into two portions and shape each portion into a ball. ≈ 10 min
- Cover the parchment paper with another sheet, place the balls on top, and flatten them into large, round discs. ≈ 3 min
- Let the pancakes rise for about 1 hour.
- Preheat the oven to 225 °C.
- Use a fork to pierce the pancakes and cook them for about 20 minutes, until they are cooked through: check with a skewer.
- Let the bread cool on a wire rack, under a dishcloth.
