A smooth broccoli purée with garlic, onion, and potato, blended very finely and served with golden, crispy bread croutons in warm oil.

Directions
- Place the oil paint and garlic in a pot on the stove. ≈ 3 min
- Once the garlic starts to brown, add the onion.
- Once the onions have turned golden, add the potatoes and pour in the broth.
- Let it simmer for 15 minutes.
- Add the broccoli and cook for another 10 minutes.
- Mix until you have a very smooth cream; if necessary, pass it through a fine-mesh sieve. ≈ 4 min
- Adjust with broth if necessary.
- Bring to a boil once, then add salt.
- If you wish, you can fry small pieces of bread in a pan with hot oil.
- Place them on top of the cream. ≈ 3 min
