These green broad beans, cooked and then simmered with ham, chives, and fresh mint, create a simple and flavorful Spanish dish. They are best prepared with slightly firm broad beans.

Directions
- Trim the broad beans. They should be a bit firmer than those intended for frying.
- Cook them in a pot of salted water. When they are almost cooked, remove them from the heat and plunge them into cold water. Drain them and add a splash of vinegar.
- First, sauté the ciboule in olive oil, then add the broad beans and simmer over low heat with mild paprika or choricero hot sauce.
- Finely chop the mint and ham, then add them. ≈ 8 min
- Taste and adjust the seasoning. ≈ 2 min
