Directions
- Soak the broad beans for 4 hours.
- Bring a pot of water to a boil with the bay leaf, then add the broad beans and cook them.
- Blend the puréed broad beans using a blender, adding a little of the cooking water if the mixture is too thick. ≈ 4 min
- Heat olive oil in a pan, add thinly sliced garlic and cook until softened. Then, add the chopped peppers and tomato puree, and let it simmer for a few minutes.
- Add the broad bean puree to this mixture and mix well. ≈ 4 min
- Add the fried green peppers, mix well, and season with salt. The mashed potatoes should remain thick. ≈ 4 min
- Decorate with ham dice and golden garlic cloves, sliced thinly. ≈ 2 min
