Breton rice pudding with a golden crust
A creamy vanilla rice pudding, baked in the oven to create a beautiful golden crust, just like the ones you find in Breton bakeries. A traditional dessert.
This rice pudding is inspired by the traditional Breton bakery versions: it’s not a dense cake, but a creamy pudding topped with a golden crust. The baking process gives it its characteristic richness.

Ingredients

Directions
- Rinse the rice under cold water to remove any impurities. ≈ 2 min
- Pour in the pot with the milk, sugar, and rice. ≈ 3 min
- Slowly bring to a simmer over medium heat, stirring the bottom with a wooden spoon every 2 or 3 minutes to prevent the rice from sticking.
- Cook for about 20 minutes over low heat, stirring occasionally, until the rice is cooked through: the grains should stick together and a skin should begin to form.
- Add the vanilla, stir for 1 minute, and pour the mixture into a heat-proof casserole dish.
- Preheat the oven to 230 °C. If it’s an electric oven, turn on both the top and bottom heating elements.
- Bake for 15 minutes, then remove the terrine from the oven at the end of the cooking time.
