Directions
- Heat a pan in olive oil.
- Place the lemon peel in the pot. ≈ 3 min
- Please, only take the yellow part, and remove the entire white part of the lemon, as it is bitter. ≈ 3 min
- Let the oil paint sit with the lemon peel for a few minutes.
- Remove from the heat, let cool, and remove the lemon.
- Heat the grape juice to approximately 38 degrees Celsius.
- Avoid overheating to prevent the death of yeast bacteria. ≈ 3 min
- Dissolve the fresh yeast in the must. ≈ 3 min

- In a large bowl, mix the juice with the oil paint (which has already been warmed up).
- Add the eggs and continue to mix. ≈ 4 min
- Add the sugar to the bowl and mix it into the liquid ingredients. ≈ 3 min
- Next, the flour is added gradually, allowing the liquid to absorb it gradually. ≈ 3 min
- You will need to add approximately 200-300 grams of extra flour as you knead by hand. ≈ 10 min
- Mix by hand, and add the remaining flour. ≈ 4 min
- Once the dough is ready, it is shaped into a ball and left to rest in a bowl, with a little flour on the sides, for at least two hours, covered with a dishcloth, in a warm, draft-free place, until it has doubled in size.
- After this waiting period, we would lightly dust the work surface with flour, then take the dough and form portions of approximately 80 grams each. ≈ 2 min
- Each portion is shaped like a ball, and we place them on a griddle covered with parchment paper. ≈ 3 min
- We recover them again using a dishcloth and let them rest for about an hour and a half to allow them to expand further.
- Preheat the oven to approximately 200 degrees.
- Meanwhile, with the remaining egg, we brush the dough balls onto the plate, making sure they don’t touch each other, and then sprinkle sugar over each ball. ≈ 10 min
- Several batches need to be made until the bread is ready. ≈ 3 min
- They should be baked for about 15 to 20 minutes at 200 degrees, and they need to be brushed with melted butter.
- Once they are ready, we let them cool down to room temperature, outside of the oven.
