“Tava koke” is a traditional bread from the Eastern Azerbaijan region, specifically from the village of Diz Amir Mar. This round, large loaf of bread is known as “koke” in the region.

Directions
- All the ingredients, except the milk, are mixed together. ≈ 3 min
- Next, the milk is added gradually until the mixture reaches a dough-like consistency. ≈ 3 min
- The dough is then wrapped in plastic wrap and left to rest for two hours (preferably in a warm place) to allow the yeast to develop.
- Lightly grease the pan, then add the ingredients.
- Next, we mix a small amount of food coloring with an egg, and then apply this mixture to the ingredients. ≈ 3 min
- Next, decorate the dough with white sesame seeds and walnuts. ≈ 2 min
- Bake in the oven for approximately 30 to 45 minutes, at a temperature of 160 or 165 degrees.
- Finally, we grill the top for an additional 5 to 10 minutes, using the broiler in the oven.
- (To check if the bread is cooked, insert a knife into the bread while it’s baking.)
- If the dough isn’t sticking, it means the bread is cooked, and you can take it out of the oven.
