Directions

  1. Season the meat with salt and pepper, then let it rest for about 30 minutes.
  2. In a bowl, combine the coconut milk and all the ingredients for the spice paste. ≈ 4 min
  3. Gently bring to a boil and simmer for 10 minutes.
  4. Add the meat and let it simmer for an additional 10 minutes.
  5. Add the lemongrass and chopped turmeric leaves. Reduce the heat and continue to cook, adding water until the meat is tender and a rich dark brown color (this may take up to 1 hour).
  6. When the coconut oil starts to separate, remove from the heat. Remove the lemongrass and turmeric leaves. ≈ 2 min

  • 250 ml of coconut milk
  • 350 ml of water
  • 2 cm of fresh ginger, peeled and chopped
  • 1 stalk of lemongrass, peeled and chopped
  • 1 teaspoon of sugar
  • A turmeric leaf
  • salt and pepper
