Directions
- Cook the meat on all sides in a pan with a little olive oil until it is browned.
- Place the meat in a pot with enough oil to cover it, along with 1 crushed clove of garlic and 1 bay leaf.
- Cook the vegetables in the red wine, and then reduce the sauce by about a third.
- Peel the tomatoes and place them on top of the meat. ≈ 8 min
- Reduce the heat. Extend the cooking time by approximately four hours, making sure to turn the beef regularly to prevent it from burning. If the sauce becomes too concentrated during cooking, adjust the consistency by adding a little hot water.
- Remove the olive leaf from the mixture. ≈ 3 min
