Directions
- Wash the Belgian endives, remove the bitter stem, and store them tightly in the bottom of a casserole dish. ≈ 8 min
- Season with salt and pepper, cover with water halfway up, and let simmer for about 30 minutes, covered.
- While this is happening, season the pheasant inside and out with salt and pepper, and brown it in a roasting pan over high heat.
- Add some delicious butter and walnuts, and bake at approximately 180 °C for about 30 minutes, basting regularly.
- Remove the pheasant and keep it warm. Deglaze the pan with the port and 10 cl of water, scrape up the juices, and let them reduce slightly.
- Once the water from the Belgian endives has evaporated, turn the heat up, sprinkle them with sugar, and return them to the pan to caramelize on all sides.
- Serve the sliced pheasant with Belgian endive, the sauce, and apple fritters. ≈ 2 min
