Directions
- Place a pot with a lid on a very low heat. ≈ 3 min
- Peel the apples with a peeler and remove the cores with a small knife. Cut out any blue, green, or damaged areas. Place them in a bowl of water to prevent them from turning brown. ≈ 8 min
- Wash them thoroughly under cold water, completely submerged, while rubbing them with your hands. Discard the water and rinse them a second time under clear water. ≈ 2 min
- Cut the larger pieces into roughly equal-sized chunks and place them in the pot along with the smaller pieces. ≈ 8 min
- Add enough water so that all the apples are submerged, but not necessarily completely covered. Season with salt, cover, and place over high heat. ≈ 2 min
- When the water boils, reduce the heat while keeping it at a simmer. Cook for about 20 minutes, or until the largest piece is easily pierced with a fork.
- Drain them. To keep some of the cooking liquid (juice or sauce), collect it in a cup or scoop some out with a ladle before draining. ≈ 2 min
- Place the pot over the heat for a maximum of one minute, to allow the apples to dry out in the steam, and shake the pot halfway through.
