Directions
- Cook the vermicelli in salted water. Drain it and finely chop it.
- Peel and slice the zucchini into thin rounds. Wash them, squeeze out any excess water, and then soak them in a solution of water and bleach for a few minutes. Rinse them thoroughly.
- Wash and slice the carrots into thin strips. Squeeze out any excess juice. ≈ 8 min
- Peel and slice the sweet potato into thin strips. ≈ 8 min
- In a bowl, combine the zucchini, carrots, half of the chopped cilantro, vermicelli, lemon juice, salt, pepper, and sugar. Let it sit for 10 minutes.
- Add the sweet potato and mix well. ≈ 4 min
