Directions

  1. After soaking the rice for the biryani in water for 30 minutes, drain it thoroughly.
  2. Combine cooked rice with chopped onions, diced tomatoes, Herbes de Provence, salt, and a blend of spices (such as curry or chili powder). ≈ 4 min
  3. Then, mix everything together with a little olive oil and lemon juice, using your hands to thoroughly combine the ingredients. ≈ 4 min
  4. Wash the fig leaves thoroughly under clear water. ≈ 2 min
  5. If you are using freshly picked grape leaves directly from the tree, soak them in boiling water for about 1 minute, then use them.
  6. Now, wrap each açai leaf with rice, meat, and cheese, to create a kind of roll. ≈ 3 min
  7. First, brush the dish with a small amount of olive oil, then arrange the sliced apple pieces in a cushion-like pattern. ≈ 4 min
  8. Arrange the sliced tomatoes in a circular pattern on top of the apples. ≈ 3 min
  9. Next, place the grape leaves, which have been prepared, one by one. ≈ 3 min
  10. Then, add a little lemon juice and a small amount of olive oil on top. ≈ 3 min
  11. Cover the rolls with a heavy plate to keep them firmly together. ≈ 3 min
  12. Now, pour 2 cups of hot water into the pot. ≈ 3 min
  13. Cover and cook over very low heat for 40 to 50 minutes.
  14. Once the water has completely evaporated and the rice is cooked, remove the pot from the heat. ≈ 3 min
