Directions

  1. Cut the meat into 25 mm thick slices, following the grain ≈ 8 min
  2. Mix the dry ingredients (salt, brown sugar, saltpeter, pepper and coriander) and spread them over the meat ≈ 4 min
  3. Add the vinegar ≈ 3 min
  4. Let the meat rest for 12 hours
  5. Dip the meat in a mixture of boiled water and vinegar
  6. Let the meat dry at a high temperature (about 40 °C) all day, for example on a radiator or by using a spotlight under a cardboard box with the meat hanging above it ≈ 3 min
