Directions

  1. Peel the Belgian endives and chop them into small pieces. ≈ 8 min
  2. Bring the salted water to a boil in a pot.
  3. Add the Belgian endive and cook for about 10 minutes, or until tender.
  4. In a separate pan, melt the butter and add the flour, mixing well until a smooth paste forms.
  5. Gradually add cold water to the flour mixture while constantly stirring to prevent lumps from forming. ≈ 3 min
  6. Add the poppy seed powder and let it simmer for another 5 minutes.
  7. Add the cooked Belgian endive and leek soup, stir gently, and let it simmer for an additional 2 minutes.
  8. Serve hot, garnished with chopped parsley and sprinkled with salt. ≈ 2 min
