Beef tongue stew in red wine sauce is a traditional dish that, unfortunately, has become somewhat forgotten today. However, it deserves to be rediscovered for its rich flavors and unique texture.

Directions
- Wash and chop the cauliflower, Brussels sprouts, onions, garlic, and ginger into small pieces. ≈ 8 min
- Remove the tongue, tendons, and blood vessels located at the rear end. ≈ 3 min
- Place the tongue, vegetables, vegetable stock, spices, 1/3 of red wine, and about 1 liter of water in a pressure cooker. Cook at high pressure for approximately 1.5 hours.
- Remove the tongue from the soup, peel it, and remove any tough bits, then cut it into thin slices. ≈ 8 min
- Strain the broth and reduce it to a light, concentrated base.
- Heat olive oil in a pan, add the drained vegetables and spices, and then cook over low heat.
- Add one-third of the red wine, along with a little reduced stock.
- Pass the contents of the pan through a sieve. Mix the resulting puree with the remaining red wine, broth, and cream in the pan. Add food coloring if desired, to adjust the color.
- Add the tongue slices to the sauce and simmer gently, without bringing it to a boil.
