Directions

  1. Slice the scallops thinly and place them in a pot with the wine and vinegar. ≈ 8 min
  2. Bring to a boil and reduce.
  3. Once removed from the heat, add the egg yolks. ≈ 3 min
  4. Place the pot on the stove, while constantly stirring until the mixture thickens.
  5. Once cooked, season with salt and pepper, then add the parsley. ≈ 2 min
  6. Once the sauce has reached a moderate temperature, add the cheese and whip until it is smooth and consistent. ≈ 4 min
