This Basque rice salad is colorful and generously filled: white rice, green peas, corn, piquillo peppers, grapes, and germinated wheat. A dressing made with olive oil and sherry vinegar adds a nice touch.

- In a bowl, combine the oil paint, vinegar, salt, and pepper. ≈ 4 min
Salad
- In a large bowl, combine the rice, tomatoes, peppers, corn, grapes, green beans, and peas with half of the dressing. Gently mix everything together. ≈ 4 min
- In a separate bowl, toss the lettuce with the remaining dressing. ≈ 2 min
- Carefully remove the lettuce from the salad bowl, leaving the excess dressing at the bottom. ≈ 3 min
Dressage
- Place a circle in the center of the plate, fill it with rice, and then arrange the lettuce around it. Sprinkle with basil. ≈ 10 min
