Beltza rice is a black rice variety from the Basque Country, colored with squid ink. It is cooked in a fish broth with a sofrito of garlic, onion, and tomato.

Directions
- Wash the rice thoroughly by rubbing it with your hands until the water runs clear. ≈ 2 min
- Dissolve the squid ink in a glass of broth or water. ≈ 3 min
- Heat the oil in a paella pan with a clove of Allium sativum (garlic).
- Once the garlic starts to turn golden, add the onion and cook together.
- Add the tomato and let it caramelize slightly.
- Add the mild paprika, then moisten with the broth and ink. ≈ 3 min
- As soon as the broth starts to simmer, add the rice and cook for 15 minutes.
- Remove from the heat, cover, and let it rest for 10 minutes before serving.
