These vegetarian Bengali croquettes combine banana flower, potato, and spices. They are crispy on the outside and soft on the inside.

Directions

  1. Wash and rinse the banana flower, making sure to oil your hands to prevent irritation. ≈ 8 min
  2. Cook the banana flower until it is tender (about 10-15 minutes). Let it cool and drain.
  3. Cook the apples, peel them, and mash them. Dice the onion and the green chili peppers.
  4. In a bowl, combine the banana blossom, potatoes, onion, chili peppers, turmeric, red chili powder, cumin, garam masala, salt, and cilantro. Form small balls and flatten them into circles or ovals. ≈ 10 min
  5. Mix the purée with a little salt and water to create a thick paste. Place the breadcrumbs in another dish. Dip each croquette in the paste, then coat it with breadcrumbs.
  6. Heat the mustard-flavored oil in a medium saucepan. Fry the croquettes, turning them frequently, until they are golden brown and crispy (2-3 minutes per side).
  7. Drain them on paper towels. Serve hot with a chutney or kasundi mustard, alongside tea or coffee. ≈ 2 min
