Directions
- First, peel the banana mulberries and place them in a metal container. ≈ 8 min
- Use a spoon or your hands to gently crush the ingredients until you have a smooth and even paste. ≈ 4 min

- It is essential that the bananas are very ripe, as this will contribute to the flavor and sweetness of the dough. ≈ 3 min
- Once the bananas are mashed, add sugar or honey. ≈ 3 min
- If you are using honey, make sure it is finely chopped or in powder form, so that it doesn’t separate from the bananas. ≈ 3 min
- Thoroughly mix the bananas and sugar together using a wooden spoon. ≈ 4 min
- Cover the mixture and let it rest for 5 minutes, to allow the bananas to release their juice and the sugar to dissolve.
- In a large bowl, combine the flour, rice flour, baking powder, salt, and ground cinnamon. ≈ 4 min
- It is best to use very fine rice flour, as if it is not fine enough, the pancakes may become tough. ≈ 3 min
- Adding flour makes the crêpes crispier on the outside and prevents them from breaking during cooking. ≈ 3 min
- Gradually add the banana puree to the dry ingredients mixture. ≈ 3 min
- Gently mix with your hands or a spoon to obtain a thick dough. ≈ 4 min
- Ideally, the dough should have a consistency similar to that of pancake batter or pastry dough. ≈ 3 min
- If the dough seems too thick, gradually add milk or water until you reach the desired consistency. ≈ 3 min
- However, be careful not to make the dough too watery, as this could cause it to splatter during cooking and prevent it from holding its shape. ≈ 3 min
- Then, add the shredded coconut to the mixture. ≈ 3 min
- The coconut adds extra flavor and texture to the batter, which sets it apart from other types of cakes. ≈ 3 min
- If you don’t have any coconuts or don’t like them, you can omit them, but it is recommended to use them, as they double the flavor. ≈ 3 min
- Now, carefully mix all the ingredients together, then let the dough rest for 15 minutes, covered.
- Meanwhile, the flour and cornstarch will expand, and the baking soda will activate, creating a perfect mixture for making light and airy cakes. ≈ 3 min
- Do not store in the refrigerator, but at room temperature.
- Place a pot or pan on the stove and heat the oil paint.
- It is best to use a medium heat to prevent the oil paint from getting too hot. ≈ 3 min
- If the oil paint is too hot, the outer surface of the wafers will burn, while the inside will remain uncooked. ≈ 3 min
- Conversely, if the oil paint is not hot enough, the wafers will absorb too much oil paint, which is not ideal for their health. ≈ 3 min
- Once the oil paint is warm, take a small amount of the paste with a spoon or your fingers and dip it into the warm oil paint.
- Don’t put too many patties in the pan at once, as they could stick together and the temperature of the oil could drop quickly. ≈ 3 min
- It takes approximately 2 to 3 minutes for each pancake to achieve a golden-brown color.
- Once both sides of the pancakes are golden brown, remove them from the pan using a spatula.
- The doughnuts can be lightly dampened with a paper towel or absorbent paper for a few minutes to remove excess oil paint. ≈ 2 min
- This will help prevent them from becoming too greasy once cooked. ≈ 3 min
- If you want to make healthy crepes without using a lot of fat, you can use a non-stick pan and lightly coat it with oil.
- Next, pour the batter into the pan and cook the crepes on both sides.
