Directions
- Roast the poblanos until softened, remove the skin, seeds, and stems, then chop into strips.
- Brown the chopped onion in the oil, then add the crumbled chorizo and cook briefly.
- Add the zucchini, chopped, and the diced and pureed tomatoes.
- Add the hot peppers and cook until the ingredients are fully cooked. Season and set aside.
- Heat oil in a pan and fry the tortillas until golden brown. Drain them on paper towels and arrange them in a single layer at the bottom of an oven-safe dish. ≈ 3 min
- Top with a mixture of vegetables and chorizo, add cream, and sprinkle with grated cheese. ≈ 10 min
- Repeat the layers of tortillas, filling, cream, and cheese until all ingredients are used, finishing with grated cheese. ≈ 3 min
- Bake in a preheated oven at 180 °C for 20 minutes.
- Serve hot, in individual portions. ≈ 2 min
