Directions

  1. Heat the flour in a heavy-bottomed frying pan over medium heat, stirring constantly, for 10 to 12 minutes, until it is golden brown and has a pleasant aroma. When properly toasted, it will no longer taste like raw flour.
  2. Toast the cashew nuts and grapes in a spoonful of ghee, along with the coconut.
  3. When the flour is warm, add the cardamom, dried fruits, and coconut. ≈ 3 min
  4. Add the powdered sugar or crumbled jaggery. ≈ 3 min
  5. Gradually add the ghee while mixing: the dough is ready when a handful pressed together forms a ball that doesn’t crack; if not, add a little more ghee, or hot water or milk. ≈ 10 min
  6. If desired, gently warm for 1 to 2 minutes, stirring constantly, to ensure thorough mixing.
  7. Shape small balls, about the size of a plum, by pressing between your palms, and then decorate them with almonds or pistachios. ≈ 10 min
  8. Let them cool completely and harden, then store them in an airtight container.
