Ash-e shileh adas, Tabriz lentil soup with bulgur
A Tabriz-style lentil soup: lentils, rice, and bulgur cooked gently in a broth flavored with onions and turmeric, with grated tomatoes, leeks, and chives.
Ash-e shileh adas is a dish from eastern Azerbaijan, in Iran, with Tabriz as its capital. This thick and hearty lentil soup, cooked slowly and stirred frequently, is a staple, as the bulgur tends to stick easily.
