Directions
- With cornmeal, simply add the salt and, if desired, some cheese, form into flattened balls, and proceed to step 4. ≈ 10 min
- With pre-sifted flour, pour the water into a mixing bowl with the salt and a tablespoon of oil, then gradually add the flour while kneading until a smooth dough forms that doesn’t stick. ≈ 10 min
- Create medium-sized balls and flatten them into regular, slightly thick discs. ≈ 10 min
- Heat the oil and fry the arepas, spooning hot oil over them to help them puff up: a pocket forms beneath a thin crust.
- Remove them and create an opening of approximately 4 cm in the crust. ≈ 3 min
- Place a raw egg in each arepa. ≈ 3 min
- If desired, seal the arepa with a little raw dough and then return it to the oil until it is golden brown and the egg is cooked through. ≈ 3 min
