The egg arepa is a specialty of the Caribbean coast of Colombia, originating in Luruaco, in the Atlantic. It is easy to prepare and offers an excellent combination of textures and flavors.

Directions

  1. Combine the corn flour and salt in a large bowl. ≈ 4 min
  2. Add the egg and mix until you have a smooth batter that doesn’t stick to your hands. ≈ 4 min
  3. Shape medium-sized balls and flatten them to create a round and symmetrical form, with a slightly thicker edge. ≈ 10 min
  4. Heat 200 ml of oil paint in a pan.
  5. Pierce the arepa shell with a fork and create an opening of approximately 4 cm. ≈ 3 min
  6. Add a raw egg inside the arepa. ≈ 3 min
  7. Close the hole with a little raw dough, and return the arepa to the hot oil until it is golden brown and the egg is cooked through.
  8. Serve hot, with locally grated cheese. ≈ 2 min
