Directions
- Wash the apples, remove the skins, and after removing the seeds, cut them into small pieces. ≈ 8 min
- Gently bring the water, juice, spices, caramel, and vanilla sugar to a simmer together, until the mixture thickens.
- Strain the soup through a fine-mesh sieve into a bowl, then pour it back into the pot. ≈ 3 min
- Whisk together the eggs, flour, and the remaining apple juice until well combined. ≈ 4 min
- Bring the soup to a boil, then add the egg mixture and let it thicken.
- Serve immediately. ≈ 2 min
