A slightly refined version of apple soup, prepared with champagne and Calvados. A light and elegant starter.
Apple soup was traditionally served on farms. Here is a modern version, inspired by the Austrian region of Styria, which adds a fruity touch with Styrian apples and an elegant touch with the use of champagne and Calvados.

Directions
- Peel the apples, cut them into large pieces, and brown them in the butter. ≈ 8 min
- Rinse with champagne and mineral water. ≈ 2 min
- Season with salt, pepper, cinnamon, and caramel, then add the chicken broth and thicken with cornstarch.
- Briefly heat the mixture, then add the Calvados gradually.
- Mash the soup to create a puree, then gently mix in the whipped cream and sour cream. ≈ 4 min
