Apple knödel with poppy seed almond butter
German potato dumplings filled with apple and honey, poached and then topped with a butter sauce made with hazelnuts, poppy seeds, almonds, and sugar.
These apple dumplings are a sweet dish popular during apple season. The dough, made with drained ricotta cheese and semolina, surrounds pieces of apple coated in honey; they are then gently poached before being pan-fried in butter with poppy seeds.

Directions
- Wash the apples, cut them into quarters, remove the core, and dice them into small pieces. ≈ 8 min
- Mix them with the honey, and simmer them in a small saucepan for about 5 minutes. Then, let them cool.
- Place the ricotta in a clean dishcloth and press it firmly. ≈ 3 min
- Whisk the lemon zest, 20g of butter, 30g of sugar, and the egg yolks together until the mixture is light and fluffy. ≈ 4 min
- Add the ricotta cheese, then the semolina, flour, and yeast, and knead. ≈ 10 min
- With wet hands, divide the dough into 8 portions and flatten each one slightly. ≈ 3 min
- Place the apples in the center and close the dough around them to form balls. ≈ 10 min
- Poach the dumplings for 10 to 15 minutes in a large saucepan of gently simmering, lightly salted water, ensuring they don’t boil, until they float to the surface.
- Melt the remaining butter in a frying pan until it turns golden, then add the remaining sugar, poppy seeds, and almonds.
- Drain the dumplings, arrange them on plates, and drizzle with poppy seed butter. Serve with caramelized apple slices, if desired.
