Directions
- Remove the anchovy fillets: discard the head, guts, central spine, tail, and fins. ≈ 3 min
- Quickly rinse the fillets under cold water to remove any blood residue. ≈ 2 min
- Layer them in a terrine, pouring lemon juice and a pinch of salt over each layer before covering with the next. ≈ 3 min
- Let it marinate in the refrigerator for at least 12 hours, ideally 24, until the fillets are fully opaque.
- Strain the lemon juice, then season with high-quality olive oil and a pinch of oregano. ≈ 2 min
- Serve at room temperature, or chilled in the summer. ≈ 2 min
