Directions
- Soak the urad dal overnight (or for at least 5-6 hours), then drain it and blend it finely, adding as little water as possible.
- Knead the dough by hand for a long time until it becomes light and airy: a drop of the dough should float in a bowl of water. Add the coloring at this stage, if you are using any. ≈ 4 min
- Heat the sugar, water, and cardamom together until the sugar is dissolved and the mixture has a medium consistency. Keep it warm.
- Pour ease of use, transfer the dough to a piping bag, or a small square of cotton fabric with a small hole poked in it.
- Heat the ghee or oil in a large, flat-bottomed frying pan over medium heat.
- Draw the amriti directly onto the warm oil: two circles in the center, followed by a ring of small loops all around.
- Fry them over medium heat until they are crispy, then immediately dip them in the warm syrup for 2 to 3 minutes.
- Drain them in a colander to allow excess syrup to drain. ≈ 2 min
