Directions
- Cook the lotus seeds for 20 minutes over low heat in 1 liter of water, skimming off any foam that forms.
- Soak the chia seeds in half a bowl of cooled, boiled water for about 2 hours, without cooking them.
- When the lotus seeds are tender, add the sugar and let them absorb it for 10 minutes over low heat, then turn off the heat.
- Prepare the aloe vera: cut it into 1 cm segments, remove the green skin, soak in lightly salted water for 15 minutes, rinse 4-5 times, cut into small pieces, soak in lemon water, then blanch for 30 seconds and refresh.
- Boil the pandan with 1 liter of water and sugar until it dissolves, then add the lotus seeds. Remove from heat, and then add the aloe vera when the mixture is warm.
- Drain the chia seeds and add them only when the chia pudding is completely cold. ≈ 2 min
