Directions

  1. Preheat a non-stick pan or a griddle over low heat.
  2. In a bowl, combine the flour, sugar, salt, baking powder, and baking soda. ≈ 4 min
  3. Heat the buttermilk and milk in the microwave until they reach room temperature.
  4. Whisk together the eggs, melted butter, and almond extract. ≈ 4 min
  5. Add the liquid ingredients to the dry ingredients and mix gently until well combined. ≈ 4 min
  6. Return the dough to a measuring cup, and add a tablespoon of water if necessary to achieve a thick but fluid consistency. ≈ 3 min
  7. Increase the temperature of the pan or griddle to medium and generously coat it with vegetable oil paint.
  8. When the oil paint starts to thicken, pour about 60 ml of paste to form a thin layer. ≈ 3 min
  9. If necessary, work in shifts to avoid overcrowding. ≈ 3 min
  10. When the underside of the crepe is golden and the top starts to bubble, flip it over after 2 to 3 minutes.
  11. Cook until the pancakes are golden brown on both sides.
  12. Repeat the process: brush the pan or griddle with oil paint.
  13. Serve hot. ≈ 2 min
