Directions
- Peel and chop the apples into large pieces. Also, peel the cloves of garlic. ≈ 8 min
- Bring a large amount of water to a boil in a pot.
- Add the potatoes and garlic to the boiling water. Cook for 20 minutes.
- Remove the garlic and then use a potato masher to process the apples, adding a little of the cooking water if needed to achieve a smooth puree. ≈ 3 min
- Heat the crème fraîche in a separate pot until it simmers.
- Gently incorporate the warm cream into the mashed potatoes, mixing with a wooden spoon. Gradually add the fresh cheese (tomme), stirring vigorously to create a light and airy texture. ≈ 4 min
- Depending on your preference, you can flavor the aligot with one or two whole cloves of garlic, crushed. ≈ 3 min
- The aligot is ready to be served. It can be accompanied by roasted meats such as chicken, pork, or sausages. ≈ 2 min
