Directions
- Remove the skin from the sweet potato and cut it into pieces. ≈ 8 min
- Boil the potato pieces in a pot with salted water (for 15-20 minutes). Check for doneness by piercing the pieces with a knife.
- While that’s happening, cook the n’drowas in a separate pot of water (for about 20-30 minutes).
- Add the fresh tomato and make small cuts to make it easier to peel later. ≈ 3 min
- Drain the cooked vegetables and remove the skin from the tomato. ≈ 2 min
- Crush the garlic and half of the onion, set aside. ≈ 4 min
- Mash the hot peppers, the n’drowas, and the tomatoes, then set aside. ≈ 4 min
- In a pot, combine garlic, tomato paste, and crushed onion, and cook for 5 minutes.
- Add the tomato paste and the reserved ndjowa paste, 10 cl of water, and the other half of the onion, sliced ≈ 3 min
- Salt to your liking. ≈ 2 min
