Directions

  1. Rinse the pigeon beans, removing any dirt or debris, then wash them and soak them in water overnight.
  2. Drain away the stagnant water. ≈ 2 min
  3. Bring the pigeon peas to a boil in fresh water and cook until tender. Drain them.
  4. Boil the sweet potatoes in water until they are tender, then drain them.
  5. Reheat the onion, chopped shrimp, and chopped bell pepper in a pan with palm oil.
  6. Add the drained sweet potatoes and pigeon peas, and gently mix. ≈ 4 min
  7. Season to taste with salt. ≈ 2 min
  8. To serve. ≈ 2 min
