Xuixo, the Spanish dessert
Catalan beignets wrapped around a Catalan cream, deep-fried in olive oil, and coated in sugar.
The xuixo (pronounced “chou-cho”), also known as chucho in Spanish, is a Catalan dessert: a light, yeasted pastry flavored with cinnamon and lemon, filled with Catalan cream, then deep-fried and rolled in sugar.

Directions
- Warm the milk to just warm, then mix in the yeast.
- Add 50g of flour, mix well, and let it rise for 20 minutes.
- In a large bowl, combine the remaining flour, egg, melted butter, cinnamon, lemon zest, and salt. ≈ 3 min
- Incorporate the starter and knead until you have a smooth, even dough. ≈ 10 min
- Flatten the dough into a rectangle and divide it into eight equal portions. ≈ 4 min
- Stretch each piece into a rectangle approximately 25 cm by 8 cm. ≈ 3 min
- Place a spoonful of Catalan cream on one of the short sides. ≈ 3 min
- Roll the dough over itself, starting from the narrow end, making sure to seal it well so that the cream doesn’t leak out. ≈ 10 min
- Let it rest for 10 minutes.
- Fry the xuixos one at a time in a pan with plenty of hot olive oil.
- Place them on a wire rack and roll them generously in the sugar.
