Directions
- While preparing the ingredients, heat a large non-stick pan or frying pan over medium heat.
- In a medium-sized bowl, combine the flour, sugar, salt, baking powder, and baking soda. ≈ 4 min
- In a 2-cup Pyrex glass container, combine the rice and milk, then heat in the microwave on medium power for 20 to 30 seconds.
- Whisk the eggs, butter, and cashew nut extract together. ≈ 3 min
- Add the liquid ingredients to the dry ingredients and mix just until combined. ≈ 4 min
- If necessary, add one or two tablespoons of water to the dough to achieve a thick but pourable consistency. ≈ 3 min
- Next, return the dough to the measuring container. ≈ 3 min
- Slightly increase the heat and generously oil the pan or frying pan.
- Once the oil paint begins to develop a texture similar to that of a spiderweb, but before it starts to smoke, add approximately 1/4 cup (60 ml) of batter. ≈ 3 min
- If necessary, work in small teams to avoid overcrowding. ≈ 3 min
- When the underside of the crepe turns golden and bubbles begin to appear on the surface, about 2 to 3 minutes in, flip the crepe over.
- Continue cooking until the color turns golden brown. ≈ 3 min
- Apply oil paint to the pan or cooking surface, then repeat the process.
- Serve immediately. ≈ 2 min
