Directions
- Cut a long line along the belly of the lamb, remove the internal organs, and trim the ends. Rinse thoroughly and allow to dry. ≈ 8 min
- Finely mince the ginger and chop the onion. ≈ 8 min
- Heat about 2 tablespoons of oil paint, add the onion and ginger, and continue cooking until the ginger takes on a nice golden color.
- Add the caillette to the pan, and stir well. Season with salt, pepper, and soy sauce.
- Add about 3 tablespoons of water, and stir until the sauce thickens.
- Sprinkle with pepper and cilantro. Serve the pâté with ginger. ≈ 2 min
