The “upside-down cake” is a traditional Vietnamese dessert prepared in a unique way. The cake batter is placed on top of the cake, rather than on the bottom, creating a stunning and fragrant dessert.

Directions
- Wash and drain the dandelions. Spread them out on a dishcloth to remove any excess water. ≈ 4 min
- Grease the baking pan (you need to use a generous amount to make it easier to remove the cake). ≈ 3 min
- Sprinkle cane sugar over the bottom of the mold, then arrange the pieces of d’aron, leaving some empty spaces, and place 1-2 cherries or grapes in each cavity. ≈ 3 min
- Mix the flour and baking powder together, then sift the mixture. ≈ 4 min
- In a bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Season with salt. Gradually add the sifted flour and yeast mixture, mixing until just combined. ≈ 4 min
- Preheat the oven to 180 °C (fan-assisted) for about 10 minutes.
- Mix the resulting dough and spread it evenly in the prepared mold. Then, bake for 45 to 50 minutes. Check for doneness by inserting a fork.
