Directions
- Wash and briefly cook the sweet potatoes, until they are tender and starting to soften.
- Finely grind the almonds to create a fine powder. ≈ 4 min
- Add the flour, baking powder, and a pinch of salt to the almond mixture. ≈ 3 min
- Mash the sweet potato and mix it with the dough you obtained earlier. ≈ 4 min
- On a parchment-lined baking sheet, spread the dough evenly to a thickness of about 6 mm, and bake for 18 to 20 minutes at 180 degrees Celsius.
- Remove from the oven, then use a pizza cutter to cut the cookies into the desired shape.
