Stuffed pumpkin with tofu and oatmeal
A hollowed-out pumpkin filled with tofu, onion, garlic, and herbs, bound together with oatmeal and baked, served with a salad of raw pumpkin.
This stuffed pumpkin is entirely vegetarian. The quinoa and oatmeal bind the filling instead of eggs. A fresh pumpkin salad accompanies it.

Directions
- Clean the pumpkin, cut it in half lengthwise, and scoop out the insides. If the pumpkin is young, use the flesh as well; otherwise, prepare the filling with tofu. ≈ 8 min
- Place the chopped pumpkin flesh or tofu on top of the onions and garlic, which have been sautéed in oil. Add the dill and celery seeds, thyme, soy sauce, and, in summer, chopped fresh dill. Then, simmer for 5 minutes.
- Before turning off the heat, add the sound and the oatmeal, which will absorb excess water and bind the mixture together instead of the egg. Cover and let the mixture sit for a few minutes.
- While that’s happening, grate a pumpkin or zucchini using a large grater, then add the finely chopped red onion and the spiced oil. This salad is best eaten raw. ≈ 8 min
- Place the filling inside the hollowed-out pumpkin, wrap it in aluminum foil, and bake. When the pumpkin is tender, the dish is ready. To serve, arrange the raw salad around the stuffed pumpkin.
