A fluffy, classic omelette, filled with whatever you have on hand: fresh herbs, ham, cheese, or sautéed vegetables. A quick and easy meal.
The omelette is one of the simplest dishes in cooking: it can be prepared in just a few minutes with very few ingredients. It’s also an ideal way to use up leftovers from the refrigerator.

Directions
- Whisk the eggs without creating foam, then mix them with the chosen ingredients. Heat a frying pan over high heat and add the fat: wait until the butter is melted and the foam has subsided. Pour the mixture into the pan and let it cook at the base.
- Fold the edges of the omelette towards the center while the top is still moist. ≈ 3 min
- Slide the omelette into the plate, with the flat side facing up. To make it shine, brush it with a little fat or fresh butter. ≈ 4 min
- To fill it, make a slit along the length and slide the filling into the resulting pocket.
