This light jelly is made with a well-filtered strawberry puree, lemon juice, and sugar syrup. The fish glue gives it its structure.

Directions
- Wash the strawberries thoroughly, remove the stems, and cut them into pieces. ≈ 8 min
- First, grind them in a food processor, then strain them through a sieve to obtain a puree. ≈ 3 min
- Mix the strawberry cream with lemon juice and set aside. ≈ 4 min
- Soak the fish glue in cold water for 5 minutes.
- Pour the water into a small pot with the sugar and bring to a simmer over low heat.
- Once the syrup has cooled slightly, add the fish glue and mix with a wooden spoon.
- Once the gelatin has melted, add the strawberry cream and stir. ≈ 4 min
- Divide among the serving dishes or plates of your choice and refrigerate until ready to serve.
