Speculoos is a traditional biscuit from Belgium and the Netherlands, originally given as a gift to Saint Nicholas. It is now enjoyed year-round, often with coffee, including in northern France. Its name comes from the Latin word “species,” meaning “spices.” The use of brown sugar gives it a characteristic caramel flavor.

Directions
- In a large mixing bowl, combine the brown sugar, softened butter, spices, and egg. ≈ 3 min
- Gradually add the flour, until you have a firm dough. ≈ 3 min
- Divide the dough into several pieces. ≈ 3 min
- Lightly grease a speculoos-shaped mold. ≈ 3 min
- Press the dough into the mold and remove any excess with a small knife. ≈ 3 min
- Flip the baking pan over onto a greased baking sheet to release the biscuits. Repeat with the remaining dough. ≈ 3 min
- Preheat the oven to 175 °C (mark 6) and place the baking sheet in the oven.
- Allow approximately 10 minutes of cooking time.
- Transfer to a griddle and let it rest for a day before serving.
