Homemade soy milk
Simple recipe for making soy milk at home, ideal for vegetarians and people with lactose intolerance.

Directions
- Soybeans, which are always kept submerged in water, need to be soaked for 8 to 16 hours.
- Pour a large pot (it should hold at least double the amount of milk), pour in one-third of the water and the drained soybeans, then heat gently.
- Heat the water and finely puree the soybeans (preferably in a blender).
- Add another portion of water to the pot, and the blended soybeans are also added. ≈ 3 min
- At a moderate temperature, and stirring occasionally, let it simmer for about 10 minutes.
- Add the last third of water and filter the milk. A white cotton dishcloth can be used for this purpose, by placing it over a salad strainer. The remaining solid residue in the dishcloth can be removed at the end. ≈ 3 min
- Allow the milk to cool and store it in the refrigerator.
