Kedjenu d’escargot is a traditional Baoulé dish cooked in a round pot. To prevent the bottom from sticking, the pot is shaken throughout the cooking process. This is an original and delicious recipe to discover!

Directions
- Preparation time: 15 minutes

- Cooking time: 40 minutes

- Thoroughly wash the snails and place them in a pot with 4 cups of salted water. Cook them for 20 minutes over medium heat.

- Finely chop the onion and fresh chili pepper, crush 2 tomatoes, and dice the remaining 2. ≈ 8 min

- If you don’t have any juice at all, add 2 glasses of water. ≈ 3 min

- Add the vegetables to the mixture. ≈ 3 min

- For seasoning, add the seasoning cube, half a teaspoon of pepper, and, if you have it, a teaspoon of ground ginger (or grated ginger). ≈ 2 min

- The Kedjenou needs to cook for 20 minutes from this point, so please make sure to shake the pot at least 3 times to prevent the bottom from sticking or burning.

- If you’re curious, you can open the container once or twice to see if the seasoning is to your liking, or if it’s too dry. If it is, simply add another. ≈ 2 min

- Your Kédjénou is ready, enjoy your meal! ≈ 3 min
