Apricot and hazelnut filled pastries
Traditional triangular Purim cookies, filled with apricot jam or chopped hazelnuts, made with an oil-based dough and orange juice.
Hamantaschen (also known as “Haman’s ears”) are triangular cookies traditionally eaten during Purim, the Jewish holiday. The filling can vary, including chocolate, jam, dates, plums, grapes, poppy seeds, or apricots. In this recipe: apricot, hazelnut, and almond.

Directions
- Preheat the oven to 175-200 °C.
- Whisk the eggs, add the flour, and mix all the ingredients for the dough in a large bowl until a smooth dough forms. ≈ 4 min
- Grease the work surface, spread the dough to a thickness of about ½ cm, and cut out circles. ≈ 8 min
- Repeat with the remaining dough. ≈ 3 min
- Spoon a spoonful of filling in the center of each circle. ≈ 3 min
- Fold up the three edges to form a triangle, leaving a small opening in the middle. ≈ 3 min
- Place the raw cookies on a baking sheet lined with parchment paper and brush them with beaten egg. ≈ 3 min
- Bake until they have puffed up and taken on a beautiful golden color.
- Let it cool: the hot filling can easily burn.
