Shortbread biscuits, also known as Scottish shortbread, are a traditional Scottish biscuit that can be enjoyed at any time of day. Directions
- melt the caramel.
- Mix the softened butter and caramel together on a board. ≈ 4 min
- Place the flour in a corner of the board. ≈ 3 min
- Gradually incorporate the flour into the butter-sugar mixture, until a soft dough forms, but not one that is too firm. Add more flour if necessary. ≈ 4 min
- Let the dough rest in the refrigerator for 30 minutes.
- Spread the dough to a thickness of about 1 cm and cut it into small rectangles, known as “fingers”. ≈ 8 min
- Alternatively, place the dough in a round mold (for example, a springform pan) and mark eight sections (without cutting them). ≈ 3 min
- Use a fork to press the dough into a baking dish. ≈ 3 min
- Bake in the oven at 150 degrees Celsius for approximately 30 minutes, or until golden brown.
- Remove the cookies from the oven and immediately sprinkle them with granulated sugar. Let them cool.
