Gaspatxo de pastor, rabbit and chicken with flatbreads
A traditional Valencian dish: rabbit and chicken, fried and then simmered with tomatoes, onions, garlic, and paprika, thickened with thin slices of bread …
The shepherds were preparing this game dish using whatever ingredients they had available, including small, thin bread cakes called “gazpacho shells.” It was a unique dish for lunchtime.
